Butter Chicken.

My friend came over a few weeks back and we were extremely hungry soo she asked if i had an boneless chicken. When i said yes she asked me for a whole bunch of other ingredients and I went and pulled them all out. About half hour later she had made me and my younger sister some of what she called "Butter Chicken".
I knew at the time that this was not the actual name of her recipe but it was really good and easy to make ! So tonight my mothers going out and i ask my sister what she wants and she brings up the butter chicken. I completely forgot what my friend had used! So i opened up my internet explorer and searched the recipe for "Butter Chicken".
And a whole bunch of spicy indian recipes came up.. Dead end for me.
I didnt want to ask my friend because i wanted to try it out first.
I'm adventurous. ahah.
I might just ask her the recipe when i next see her.. BUT if all goes well then i neednt ask her anything.

I will start off with:
Boneless Chicken
Adobo
Sofrito
Saz`on
Salt
a PINCH of oregano, unless your an oregano fan that is (:
[+ tons of BUTTER, of course ]

Because i know these are the things she used for sure.


First off of course is to let the chicken thaw.
When its done thawing you can chop off the fat if youd like or tenderize it to your liking.
I however just cut off the fat and cut all breasts in half. After this i took a fork and poked all the chickens in various random appropiately spaced spots. I do this because i want the flavor to seep in my boneless chicken breast as well as coat it.
Now season away ! (and to your liking of course).

(My first step was to cover each chicken piece in sofrito enough to stain the chicken a bit. afterwards I got the sazon and applied liberal amounts. I wanted my chicken to get the orange glow to it that would guarantee flavor and stick even after cooked and by being liberal I'm assured this. Adobo went next for me and i sprinkled just enough but not to much. Before i went further of course i made sure to massage up my chickens and spread the adobo around on both sides. I wasnt really sure about the oregano but i put about a teaspoon of oregano in my hand before i sprinkled just a touch on my chickens. It all worked out well for me though because Im not an oregano fan, however please apply to your liking. I sprinkled some salt next just reassure myself of flavor and voila! done with my seasoning. A few tips to seasoning is always get down your liquids first. Hence the Sofrito being the first addition. By adding any liquid towards the end of your method you might take away from other seasonings. From there you can pretty much work your way up to not coats or layers but mixtures.)

Off to the pan. I pretty much layed about two tablespoons of butter on the pan and heated it up so it melted. This gave my chicken a better finish then i feel oil would have. I cooked the chicken each about 8minutes on each side


 and finished off with some lovely..
something-or-other chicken. but it was really good (: im uplading some pictures soon.
You might want whole baby potatoes to go with your chicken because its not to filling like baked potato nor to much like mashed.
Enjoy and though its not an everyday meal, it certainly can be an everyday recipe.
And heres what i ended up with: i uh couldn't help my extremely hungry self and bit into a piece while lathering my potatoes in butter, hah. thats also butter on the side, so though it may not be a beautiful picture it certainly is an appetizing meal.
